One of Cuzco’s Favorite Dishes, Pipián de Cuy
On Cuzco weekends, children wait excitedly for Sunday to arrive. They look forward to spending that day with their parents who, on that day alone, do not go to work.
After a family breakfast, with lots of laughter and joy, the parents announce that the whole family will go to one of the fun places for family outings in Cuzco. Among these are the parks, pools, plazas and other places inside and outside the city.
Every Sunday, the main family dinner in early afternoon should be something different from that which they eat on the other days of the week. Popular dishes include ceviche, lechón, chicharrón, and pipián de cuy.
Pipián de cuy is one of the most loved of traditional dishes. Every weekend they prepare it in picanterías, in homes, and in restaurants. It is exquisite and is made for guinea pig, one of the most delicious meats found in the city. People find great flavor in its when they consume it all the way down to its little bones.
Pipián de Cuy
Ingredients
(For 4 persons)
- 1 cuy (guinea pig)
- Potato
- Onion
- Oil
- Cumin
- Salt
- Garlic
- Peanuts
- Rice
Preparation
Season the guinea pig with salt and pepper, and then fry it in oil. Next prepare a dressing (sofrito) with garlic, onion, and cumin. Now add the ground peanuts. Let the sauce boil for 10 minutes. No add the cuy and 4 cups of water and let it boil for 20 minutes. Then add the potatoes cut into pieces and let the dish cook until the potatoes are ready to be eaten.
In the meantime you should prepare w white rice and serve it to the side of the pipián and its sauce.
