Chicken Milanesa, a Favorite of Cusco
Chicken milanesa is a favorite dish in Cusco, and indeed Peru, especially at lunch time. Every day it is prepared in the city’s restaurants. It is a simple dish that everyone can make in their homes. Many people prefer to eat this dish all the time.
It is served with white rice, a salad of onion and tomatoes, as well as the breaded and fried chicken breasts. Those are what we think of when you mention a milanesa de pollo, a chicken milanesa.
In my home, my mother makes this dish sometimes. Each time she cooks this dish my sisters and I are happy. We help her prepare the dish so that it can be cooked quickly.
We also like a beef milanesa. This is the same as the chicken milanesa with the only difference that the poultry takes the place of beef. In either case the dish is easily made. It takes about ten minutes. You spend this time pounding chicken breasts together with breadcrumbs. When you finish, all will be ready and you just have to quickly dip the breaded breast in a beaten egg.
Chicken milanesa is one of my favorite dishes and I like to eat it with my family and friends any day.
